1 lb. ground chicken (or turkey if you prefer)
1 c. seasoned bread crumbs or dry stuffing mix
1 tsp salt
1 tsp pepper
3/4 c. skim
2 tbs Worchester sauce
Preheat oven to 350
Spray meatloaf pan with Pam
Mix all ingredients in a large bowl
Transfer mixture to pan
Bake for 45 minutes
Top meatloaf with a squiggle of ketchup.
Bake 15-30 minutes more.

I typically serve this with mashed potatoes and steamed carrots. I detailed the prep of those items in a recent post, Easy, Delicious Crock Pot Whole Chicken. I typically double the meatloaf recipe. Then I have enough leftovers for me to have dinner all week. (Plus there’s still enough for Mark to have leftovers twice.)
